NAMPA — Copper Canyon restaurant has returned to downtown Nampa.
The restaurant spent about 12 years downtown before it moved from 13th Ave. S. to the Broadmore Golf Club two years ago. Now it’s back in downtown in the former Darby’s location at 112 13th Ave. S.
Owner and chef Brian Inaba said he worked with the building’s owner and they both wanted to bring more energy to downtown.
“It just seemed like a good opportunity to get back downtown,” Inaba said. “I enjoyed it when I was there before.”
The new space has a warm feel, he said, and room to accommodate groups of 25 people and up to 200 at the neighboring Belle Event Center.
Inaba is bringing favorite menu items over to the new restaurant, and he’s added lunch options, including sandwiches and salads. The restaurant will also have an Idaho focus with local wines, and there is a full bar.
Copper Canyon will have a soft opening Wednesday. It will only be open for lunch the first week and then move to a full schedule the following week. Lunch and dinner will be served Wednesday through Saturday and lunch will be served on Sundays.
Copper Canyon is across the street from its former downtown location, which is now occupied by the Idaho Hop House.
