Last December, Forbes ran an article titled "Here's Why You Should Turn Your Business Vegan In 2018," spotlighting the diet and lifestyle. It cited a plant-based food sector worth $3.1 billion and the explosion of dairy alternatives—expected to soar from 25 to 40 percent of the market over the next three years—among other market motivators. While Idaho may be home to fewer vegans than most (The Gem State raises more than 2.1 million in beef cattle, after all, meaning cows outnumber people here) Boise brunch and dinner hotspot Wild Root has joined the movement, offering some of the tastiest and most stunning vegan dishes around. The Nourish Bowl is a case in point: plant-based eaters (or meat-lovers stepping out) who order it can chow down on a huge portion of raw veggies, including rainbow carrots and radishes, topping a bed of warm riced cauliflower and crowned with half an avocado, a sprinkling of almonds and blueberries, and a drizzle of fermented garlic-honey-lemon vinaigrette. The menu also includes omnivorous options, but at just $11, the Nourish Bowl packs a vegan bang for your buck that anyone can appreciate.
